- 300ml double (heavy) cream
- 225ml chicken stock

- 1 bunch fresh basil leaves
- 1 red chili
- 110g sun-dried tomatoes (packed in oil for the best flavor!)
- 1 tbsp tomato paste
- Juice & zest of 1 lemon
- 2 tbsp sun-dried tomato oil
- 1 tsp smoked paprika
- 2 pinches dried oregano
- 1 tbsp water
- Salt & pepper to taste

- Olive Oil Mash – Simply replace milk & butter in your mashed potatoes with extra virgin olive oil, salt, and pepper for a creamy, flavorful twist.
Step-by-Step Instructions
1️⃣ Make the Paste – Blend all the paste ingredients in a food processor.
2️⃣ Sear the Chicken – Generously season the chicken with salt. Heat a cast iron skillet over medium-high heat with a splash of oil. Sear skin-side down for 5-10 minutes until golden and crispy. Flip and cook for another 2 minutes before setting aside.
3️⃣ Cook the Paste – In the same pan, add a little more oil and fry the paste for a few minutes over medium heat.
4️⃣ Create the Sauce – Pour in the heavy cream and chicken stock, then season with salt and pepper. Bring to a boil, then reduce to medium-low and simmer for 5 minutes.
5️⃣ Finish Cooking the Chicken – Place the chicken back into the sauce (keeping the skin exposed), then transfer to a preheated 160°C / 320°F oven. Bake for 25 minutes or until fully cooked.
6️⃣ Rest & Serve – Remove from the pan and let the chicken rest for 10 minutes while finishing the mash and greens. Slice, serve with the creamy sauce, and enjoy!
