π½ Ingredients
Onions:
- 3 white onions, julienned (Slice effortlessly with this top-rated mandoline)
- 65g unsalted butter
- Pinch of salt
- 1 tbsp thyme, finely chopped
- 300ml beef stock
Breadcrumbs:
- 1 small baguette (Get perfect, even slices with this serrated bread knife)
- 1 tbsp finely chopped thyme
- 3 tbsp olive oilΒ
- Pinch of salt
Mac & Cheese Base:
- 110g unsalted butter
- 110g all-purpose flour (Make measuring easy with this digital kitchen scale)
- 1.1L whole milkΒ
- 100g Gruyère cheese (Shred it like a pro using this stainless steel cheese grater)
- 100g mozzarella cheese, grated
- 1 tsp Dijon mustard
- 5 gratings nutmeg
- Salt & pepper
- 500g spirali (cavatappi) pasta (Cook it perfectly in this large non-stick pot)
π₯ Step-by-Step Instructions
1οΈβ£ Caramelizing the Onions
- In a heavy-bottom pan, add onions, butter & a pinch of salt.
- Cook over medium heat for 30-40 minutes until dark, golden & caramelized.
- Add stock & thyme, turn heat to medium-high, and cook for 10 more minutes until most of the stock is absorbed. Set aside.
2οΈβ£ Making the Breadcrumbs
- Slice the baguette into discs with a bread knife.
- Toss with olive oil, thyme & salt in a bowl.
- Lay out on a baking sheet and bake at 350Β°F (175Β°C) for 5-10 minutes until golden.
- Blend into coarse breadcrumbs using a powerful food processor.
3οΈβ£ Preparing the Cheese Sauce
- In a saucepan, melt butter over medium heat, then mix in flour. Cook for a few minutes.
- Gradually whisk in milk to avoid lumps, stirring constantly.
- Let it bubble for a few minutes, then remove from heat.
- Add 2/3rds of the caramelized onions, cheeses, mustard, nutmeg, salt & pepper.
4οΈβ£ Cooking the Pasta
- Bring a large pot of water to a boil, season with salt, and cook pasta for 8-10 minutes until al dente.
- Reserve some pasta water, then drain.
5οΈβ£ Bringing It All Together
- Add pasta back to the pan, pour over the cheese sauce, and mix.
- If too thick, add a splash of pasta water to loosen.
- Smooth it out, top with breadcrumbs & remaining onions.
- Place under a broiler/grill for 5 minutes until golden & crispy.
